Recipe of the Week


Daddy’s Vice Cake (A special treat in honor of Father's Day!)
1 box Betty Crocker cake mix (chocolate)
1 jar butterscotch caramel topping
1 bag toffee pieces (most of it)
1 jar/can cake frosting (vanilla)
Cake decorations if desired

Directions
Make cake as directed on cake box mix
Make holes in the cake with a pencil sized tool, about ˝ inches apart
Pour butterscotch caramel topping over the top of the cake and into the holes
Sprinkle toffee pieces over the top of the cake
Put in the refrigerator for awhile before attempting to frost
Frost cake (this is tricky because of the toffee pieces)
Decorate if desired, but it may remain ugly due to the toffee pieces



Kolaches

12 oz.. evaporated milk
˝ cup hot H2O
2 pkgs. of Rapid Rise Dry Yeast
2 eggs (beaten)
˝ cup of melted butter
7 cups of fl our
1 T. salt
˝ cup sugar
Jam
1 lb. apricots & ˝ cup sugar

Directions
Pour hot H2O over evaporated milk in bowl. When lukewarm add sugar & yeast. Beat well. Add 2 ˝ cups of fl our, salt, and beaten eggs. Add rest of fl our and melted butter. Continue to beat fl our until dough is smooth and can be handled – not sticky. Brush top of dough with melted butter. Let rise until doubles in bulk. Cover with cloth. Punch dough down and let rise again. Make ball and let rise on bread board and cover with dish towel. Make an indentation in the center of each Kolochy. Let rise once again.

Begin to make filling. Cover fruit with H2O and bring to boil. Cover tightly and turn off heat. Allow to stand over night or until tender. Mash fruit so no large chunks. Again cook cut up apricots covered in H2O. When jam is consistent, add sugar until H2O is dissolved. Kolaches are ready to be filled!



Mexican Dip
16 oz. softened cream cheese
4 oz. thick/chunky Picante salsa
2-3 cloves fresh garlic (ground or minced)
8 oz. taco sauce
1 green pepper chopped
1 red pepper chopped
1 large tomato chopped
˝ pkg scallions chopped
4 oz. can of sliced black olives, drained
Tortilla chips

Directions
Mix together cream cheese, garlic and Picante salsa. Form a mound in the middle of a plate. Refrigerate all day or overnight. Mix all veggies with taco sauce and chill. When serving, pour veggie mixture over mound. Serve with tortilla chips.
